Amish corn pud
Method
- Preheat oven to 180°C fan forced (200°C normal).
- Whisk the corn with 2 tbsp melted butter, the grated cheese, eggs, parsley, a generous amount of seasonings and the hot milk until well combined.
- Then butter a gratin (or any ovenproof dish), pour in the mixture and give it a little stir. Place the dish in a baking tray, pour boiling water to about half way up the sides and cook in the oven for about 30-40 mins until set.
- Serve with a simple green salad on the side.

- kernels of 4 corn cobs
- 4 tbsp melted butter
- ½ cup grated tasty cheese
- 2 eggs
- 2 tbsp chopped fresh parsley
- sea salt & freshly ground pepper
- 2 cups hot milk
