A simple saute of mushrooms


  • Heat a little oil in a heavy-bottomed pan and gently cook the hardier mushrooms with seasonings until lightly caramelised. DON’T STIR.
  • Add the delicate mushrooms and briefly toss.
  • Then add the lemon juice, butter and parsley. Stir and cook to just melt the butter.
  • Serve as an accompaniment to a simple grill.


  • olive oil
  • a variety of firm & delicate fresh mushrooms, cleaned & prepared
  • sea salt & freshly ground pepper
  • juice of ½ lemon
  • 1 knob butter
  • 1-2 tbsp chopped parsley
