Creamy ham & cheese stuffed crepes


  • Combine the flour, salt and sugar in a bowl. Then make a well in the centre and add the eggs with enough milk to form a batter consistency. Whisk well.
  • Melt a dollop of butter in a crepe (or small non-stick) pan and whisk into the batter.
  • Then cook crepes, melting a little more butter between each one.
  • Scatter some ham and cheese on each crepe. Sprinkle with a little cream, roll up and place in an ovenproof dish in one layer – ensuring a tight fit.
  • Then sprinkle more cheese and cream over the top and cook in the oven for about 20 mins until golden and bubbling.
  • Serve with a simple salad on the side.
