Quick, quick stir fried chicken with lemon


  • Heat a little oil in a wok (or heavy-bottomed, non-stick pan) until smoking. Then toss the chicken until lightly coloured.
  • Add salt, pepper, stock, lemon juice and parsley. Toss and briefly cook.
  • When ready remove the chicken, taste the liquid for seasoning and reduce.
  • Serve the chicken with cooking liquid spooned over the top and steamed rice or mash on the side.

  • 12 chicken tenderloins, each sliced in 3-4 lengthways
  • sea salt & freshly ground pepper
  • ½ cup chicken stock
  • juice of 1 lemon
  • 2 tbsp chopped fresh parsley
