BBQ marinated butterflied leg of lamb


  • Whisk the oil and soy with a little salt, plenty of ground pepper, the chilli paste, mustard and lemon juice in a large bowl.
  • Then toss the lamb in the marinade until well coated and set aside for about 30 mins.
  • When ready, cook the lamb on a preheated, covered BBQ for 30-40 mins, skin side down first, brushing with the marinade as you do so. Remove and set aside for 15-20 mins, before slicing.
  • Serve the lamb with the juices and parsley sprinkled on top and your favourite salads on the side.



  • ½-1 cup olive oil

  • 2 tbsp Dijon mustard
  • juice of 1-2 lemons
  • 1 butterflied leg of lamb
