Xmas ice cream pudding

Method

  • Mix together everything but the berries until well combined. Then taste for sweetening. 
  • Line another bowl with plastic wrap, spoon in the ice cream, cover with plastic and freeze overnight. 
  • To unmold, place the bowl upside down on a large plate and wrap a hot wet tea towel around. 
  • Serve with a sprinkling of berries and a dusting of icing sugar on top.

Ingredients

  • 2 litres vanilla ice cream, softened
  • 50 gm glace pineapple, chopped
  • grated rind of 1 orange
  • ½ cup chocolate bits
  • 25 gm glace ginger, chopped
  • 50 gm glace cherries, chopped
  • 1 cup chopped mixed dried fruit
  • 1 heaped tbsp brandy
  • 1 heaped tbsp Grand Marnier
  • a mixture of fresh berries (optional)
  • icing sugar
