T-bone steaks with blue cheese tomatoes


  • Preheat oven to 220°C fan forced (240°C normal). 
  • Season the steaks and seal them on both sides in a layer of hot oil in a heavy-bottomed pan that can go into the oven. Then cook in the oven for about 5 mins for medium-rare, turning once. 
  • Place the tomatoes on top of each steak, cut side down, and scatter with some cheese. Then briefly cook under a preheated overhead grill until the cheese has melted a bit and is bubbling. 
  • Sprinkle the herbs over the top and serve with a simple salad.


  • 4 x fairly thick T-bone steaks
  • sea salt & freshly ground pepper
  • olive oil
  • 1 punnet cherry tomatoes, halved
  • Gorgonzola-style blue cheese, crumbled
  • a good handful of fresh mini herbs
