M. Olver's pecan balls

Method

  • Preheat oven to 160°-180°C fan forced (180°-200°C normal). 
  • Cream the butter with the sugar until light and fluffy in a large bowl using an electric beater. 
  • Add the vanilla, ground pecans and the flour. Mix with a wooden spoon until well incorporated. 
  • Form the mixture into small balls and place them on a lightly oiled baking sheet (or two), leaving about 5 cm between each one. Cook in the oven for about 15 mins until lightly browned on the bottoms. 
  • Then, while still hot, carefully place the balls on a cake rack and generously dust with icing sugar. 
  • When cool, dust the balls again with icing sugar and serve.

  • 2 tbsp caster sugar
  • 1 tspn vanilla essence
  • 1¼ cups ground pecan nuts
  • 1 cup plain flour
  • cooking oil spray
  • icing sugar
