Grilled sardines with Baba Ghanoush


  • Prick the eggplant all over with a fork and cook it in the microwave on high for 5 mins. Then add the garlic and cook for about another 2 mins until tender. Set aside to cool a little, before scooping out the flesh of the eggplant and squeezing out the garlic. 
  • Process the garlic, eggplant, tahini, 2-3 tbsp lemon juice, the cumin, cayenne, seasonings and Tabasco until smooth. 
  • Then add the parsley and pour 2-3 tbsp oil through the feeder tube, continually mixing. Taste for seasoning. 
  • Preheat the overhead grill to the highest degree. 
  • Then lay the sardines in an oven tray. Sprinkle with lemon juice, seasonings and a little oil, and grill for 5 mins. 
  • Serve the sardines with a good dollop of Baba Ghanoush on the side.
  • nb. The eggplant can be cooked in the oven, if you prefer.

  • ½ tspn ground cumin
  • ½ tspn cayenne
  • sea salt & freshly ground pepper
  • a few splashes of Tabasco
  • 2 tbsp chopped fresh parsley
  • olive oil
  • 24 sardine fillets
