Chicken with ginger beer BBQ sauce


  • Spray the chicken with a decent amount of oil, season and cook on a lightly oiled, covered BBQ (or in a hot oven), turning every now and then and squeezing with fresh lemon juice as you do so. 
  • To make the sauce, put the ginger beer, tomato sauce, Worcestershire and orange juice with ¼ cup lemon juice, the ginger, garlic, sugar and seasonings in a heavy-bottomed pot. Whisk well and gently cook for about 20 mins until thick and fragrant. Set half aside. 
  • When the chicken is almost ready, start brushing with the sauce and continue cooking.
  • Serve the chicken with the retained sauce sprinkled over the top and the rest in a small bowl on the side.

  • 3 tbsp Worcestershire sauce
  • ¼ cup fresh orange juice
  • ½ tbsp grated fresh ginger
  • 2 large garlic cloves, crushed
  • 1 tbsp brown sugar
  • 1 heaped tbsp chilli paste
