Sausage, gruyere & caramelised onion panini


  • Heat a little oil in a pan and gently sauté the onions with a little seasonings until light golden, regularly stirring. 
  • At the same time, parboil the sausages until tender to the touch. Then drain well and panfry in a little hot oil until golden. Set aside to cool before cutting in half lengthways. 
  • Smear mustard onto one side of half of the bread and top with a mound of the onions, cheese and sausage. Then smear the remaining bread with relish and place on top. 
  • Spray both sides with oil and cook in a sandwich grill (or under the overhead grill).

  • 2 large onions, finely sliced

  • 8 thick slices Cobb loaf or any country-style bread
  • Dijon mustard
  • sliced gruyere
  • your favourite relish or chutney
  • olive oil spray
