New York roasted wedges with streaky bacon, avocado & sour cream

Method

  • Preheat oven to 200°C fan forced (220°C normal). 
  • Combine the dried oregano and cumin with 3 tbsp oil in a large bowl. 
  • Scrub the potatoes well and cut each one into 6 wedges. Toss in the spiced oil until well coated and then transfer to a large baking tray, in one layer. Cook in the oven for about 40 mins until golden and tender, turning just once. 
  • When almost ready, heat a little oil in a pan and briefly fry the bacon, continually stirring. 
  • Then mash the avocado with the lemon juice, ground pepper and coriander. 
  • Transfer the wedges to a large bowl (or individual ones) and top with a good dollop of avocado, sour cream and a sprinkling of bacon. Serve with plenty of serviettes! 
  • nb.  If you like, tomato salsa could also be served.

  • 1 avocado
  • juice of ½ lemon
  • freshly ground pepper
  • 1 heaped tbsp chopped fresh coriander
  • sour cream
