Nasi Lemak with coconut rice

Method

  • Briefly whiz the onions, garlic and lemongrass in a food processor. Then add 1 cup stock, the curry powder and chilli paste, and finely process. 
  • Heat a little oil in a wok (or large non-stick pan) and briefly fry the above paste to release the aromas. 
  • Then add the chicken, mix well and cook until it changes colour, stirring now and again. 
  • Add a little salt with the potatoes and remaining stock. Toss well and bring to the boil. Turn the heat down and simmer for 30 mins. 
  • Then add 300 ml coconut milk, stir well and simmer for another 5 mins.
  • While cooking the curry, put the rice and water with 1 tspn salt and the remaining coconut milk in heavy-bottomed pot. Stir well and bring to the boil. Then turn the heat right down, tightly cover and very gently simmer for about 20 mins until tender and most of the liquid has been absorbed. 
  • To serve, mound the rice on individual plates and arrange the anchovies, peanuts, eggs, cucumber and pineapple alongside, with the curry in a bowl on the side.

  • 3 medium onions, cut into chunks
  • 2 large garlic cloves
  • 1 lemongrass stalk, white part only, finely chopped
  • 1½ cups chicken stock
  • 3 tbsp curry powder
  • 1 tbsp chilli paste
  • vegetable oil
  • 6 chicken thighs, skin & bones removed, cut into cubes
  • salt
  • 8 chats (baby potatoes), quartered
  • 3 cups basmati (long grain) rice, washed well
  • 3 cups water
  • 700 ml coconut milk
  • 100 gm dried anchovies, rinsed & drained well & then shallow fried
  • 1 cup peanuts fried in a little vegie oil, drained
  • 4 hard boiled eggs, halved
  • ¼ telegraph (continental) cucumber, sliced on the diagonal
  • 1 cup pineapple wedges (canned or fresh)
