Vegemite & cheese muffins


  • Preheat oven to 200°C fan forced (220°C normal). 
  • Whisk the flour, buttermilk, oil and eggs until well incorporated. Set aside for 30 mins. 
  • Then add the cheese and spring onions, and mix with a wooden spoon until well combined. 
  • Place 12 large paper cases in 2 muffin trays and fill up to two-thirds with the batter. Cook in the oven for about 30-40 mins until a skewer comes out clean. 
  • Gently melt the butter with the Vegemite, and whisk well. Then brush the muffins with the mixture, set aside to cool a little and serve.


  • 480 gm self-raising flour, sifted
  • 2 cups buttermilk (or normal milk)
  • 80 ml canola (or vegetable) oil
  • 2 eggs, lightly beaten
  • 100 gm grated tasty cheese
  • 3 spring (green) onions, finely chopped
  • 60 gm unsalted butter
  • 1 tbsp Vegemite
