Vegemite & cheese muffins
Method

Preheat oven to 200°C fan forced (220°C normal).

Whisk the flour, buttermilk, oil and eggs until well incorporated. Set aside for 30 mins.

Then add the cheese and spring onions, and mix with a wooden spoon until well combined.

Place 12 large paper cases in 2 muffin trays and fill up to two-thirds with the batter. Cook in the oven for about 30-40 mins until a skewer comes out clean.

Gently melt the butter with the Vegemite, and whisk well. Then brush the muffins with the mixture, set aside to cool a little and serve.

480 gm self-raising flour, sifted

2 cups buttermilk (or normal milk)

80 ml canola (or vegetable) oil

2 eggs, lightly beaten

100 gm grated tasty cheese

3 spring (green) onions, finely chopped

60 gm unsalted butter

1 tbsp Vegemite
