Rocky, rocky road


  • Gently melt the chocolate in a double boiler over simmering water, continually stirring with a wooden spoon (or melt in the microwave, stirring now and again). 
  • Then remove from the heat and add the Brazil nuts, glace cherries, marshmallows, Turkish Delight and Grand Marnier. Mix well with a wooden spoon. 
  • Spray a slice tin with oil and line it with baking paper, hanging over the sides. Spoon the chocolate mixture into the tin, spreading out to the corners, and refrigerate until set. 
  • When ready, cut into chunks and serve. 
  • nb.  Grand Marnier can be left out for kids.


  • 500 gm good quality dark cooking chocolate
  • 100 gm brazil nuts, dry roasted, skins removed & chopped
  • 100 gm glace cherries
  • 100 gm mini marshmallows
  • 150 gm Turkish Delight, chopped & tossed with extra icing sugar
  • a good splash of Grand Marnier (optional)
  • cooking oil spray
