Meatloaf with mash & mustard sauce

Method

  • Preheat oven to 220°C fan forced (240°C normal). 
  • Heat a little oil in a heavy-bottomed pan and gently sauté 1 chopped onion with the capsicum and 2 crushed garlic cloves until tender, stirring now and again. 
  • Place the bread in a bowl, cover well with stock and set aside until it is moist. Then squeeze out any excess moisture from the bread with your hands and retain the stock. 
  • Using a wooden spoon, mix together the bread, sautéed vegies, mince, 2 heaped tbsp mustard, 3 tbsp chopped parsley, seasonings, ¾ cup BBQ sauce and the eggs in a large bowl until well incorporated. 
  • Then lightly spray 1-2 loaf tins with oil and spoon in the mince mixture, pressing it into the corners and smoothing the top. Cook in the oven for 1½ hours and then lightly brush with more BBQ sauce. 
  • While the meatloaf is cooking, heat a little fresh oil in a pot and gently sauté the remaining garlic and onion until tender, regularly stirring. 
  • Add the tomatoes, about 2 cups stock, Worcestershire and seasonings with the remaining parsley and mustard. Stir and gently cook until reduced quite heavily, adding more stock as needed (including the reserved stock). 
  • Serve thick slices of the meatloaf with the sauce spooned over the top and a good mound of mash on alongside. 
  • Don’t worry if there are leftovers, the meatloaf is even better served the next day. Fantastic in sandwiches too! 
  • nb.  A gratin (casserole) dish or deep baking dish can be used in place of the loaf tins, but cook for less time.

  • 1 litre beef stock
  • 1 kg minced chuck (or any stewing) steak
  • 4 heaped tbsp Dijon mustard
  • 4 heaped tbsp chopped fresh parsley
  • sea salt & freshly ground pepper
  • 1 cup BBQ sauce
  • 2 large eggs
  • olive oil spray
  • 1 can diced tomatoes
  • a slurp of Worcestershire sauce
  • mashed potato
