Portuguese Cataplana


  • Preheat oven to 180°C fan forced (200°C normal). 
  • Put the pork belly and chorizo in a large roasting tray, in one layer, and cook in the oven for about 20 mins until lightly browned and cooked. 
  • At the same time, place the fresh tomatoes in another tray, cut side up, and sprinkle with seasonings and oil. Cook in the oven until tender and collapsed. When cool enough to handle, slip off the skins, chop and drain. 
  • Heat a little oil in a large heavy-bottomed pan and gently sauté the garlic, capsicum, celery and onion until reasonably tender, stirring now and again. 
  • Add the spices and chilli paste. Mix well and briefly cook to toast. 
  • Then add about 1 litre stock, the diced tomatoes, seasonings, bay leaves and thyme. Stir well, bring to the boil and cook for about 20 mins, stirring now and again. 
  • Add the roasted tomatoes, pork, chorizo and mussels. Cover and gently cook, removing the mussels as they open, discarding any that don’t. 
  • Put the mixture into individual bowls, sprinkle chopped coriander (or parsley) over the top and serve with lots of crusty bread on the side.

  • ¼ tspn ground allspice
  • 1 heaped tbsp chilli paste
  • 1¼ litres chicken stock
  • ½ can diced tomatoes
  • 2 bay leaves
  • 2 fresh thyme sprigs
  • 500 gm mussels, cleaned & debearded
  • 2 tbsp chopped fresh coriander or Italian (flat leaf) parsley
