Steamed salmon with chilli & lime oil


  • Put the oil, chillies, garlic, lime zest and juice and seasonings in a small pot.  Stir, bring to the boil and cook for a few minutes. Remove from the heat and set aside for about 2 hours. 
  • Then put the salmon on a plate that can fit into your steamer basket. Spoon plenty of the infused oil over the top, cover and steam. 
  • When ready, serve the salmon with some sauce spooned over the top, a sprinkling of spring onions and green vegies on the side.

  • 4 small red chillies, seeded & finely chopped
  • 2 garlic cloves, finely chopped
  • grated rind of 1 lime & juice of 2
  • sea salt & freshly ground pepper
  • 4 x 180 gm salmon steaks
  • 3 spring (green) onions, shredded
