Rice Bubble & Coco Pop slice

Method

  • Gently cook the butter, honey, sugar and peanut butter in a heavy-bottomed pot until everything has dissolved, stirring now and again. Then bring to the boil and simmer for 5 mins without stirring.  
  • Transfer the mixture to a large stainless steel bowl and add the Coco Pops, Rice Bubbles and coconut. Stir with a spatula until well combined. 
  • Oil a slice tin and line it with baking paper, overlapping the sides. Spoon in the mixture, smooth the top and push into the corners. Then refrigerate for an hour or two to set.

  • 140 gm melted honey
  • 110 gm caster sugar
  • 80 gm smooth peanut butter
  • 90 gm Coco Pops
  • 75 gm Rice Bubbles
  • 1 cup shredded coconut
  • cooking oil spray
