On the side - Sticky carrots


  • Preheat oven to 180°C fan forced (200° C normal). 
  • Toss the carrots in a little oil and seasonings in a large baking tray. Cook in the oven for about 15 mins until reasonably tender, tossing now and again. 
  • Then toss the carrots with the honey and parsley. Cook for another 5-10 mins until well glazed.


  • 2 bunches baby carrots, peeled
  • olive oil
  • sea salt & freshly ground pepper
  • a good squirt of honey (or 1 heaped tbsp)
  • 2 tbsp chopped fresh parsley
