My Bircher muesli

Method

  • The night before serving, whisk the cream with a hand beater to form soft peaks. 
  • Then add the yoghurt and mix well, before adding the berries, dried fruit and shredded coconut. Mix until well combined. Then taste and refrigerate overnight. 
  • If you like, serve with some melted honey drizzled over the top.

Ingredients

  • 250 ml cream
  • 250 ml plain yoghurt
  • 250 gm mixed berries (fresh or frozen)
  • 45 gm dried apricots, chopped
  • 45 gm dried figs, chopped
  • 45 gm sultanas
  • 45 gm pecans, chopped
  • 45 gm dried dates, chopped
  • 45 gm shredded coconut
