Salt baked potatoes with oil marinated goat's cheese


  • Preheat oven to 220°C fan forced (240°C normal). 
  • Put a layer of salt in a heavy-bottomed casserole (or claypot) and place the potatoes on top in one layer, if possible. Tightly cover and cook in the oven for about 1 hour until tender. 
  • Then brush any excess salt from the potatoes and toss with dollops of the cheese and chives.


  • 1 packet sea salt
  • 20 chats (baby potatoes), scrubbed well
  • oil marinated goat’s cheese (or Persian feta)
  • 2 tbsp fresh snipped chives
