High fibre pear slice

Method

  • Preheat oven to 180°C fan forced (200°C normal). 
  • To make the batter, cream the brown sugar and butter with an electric hand mixer until it lightens in colour a little. 
  • Add the flour, rolled oats and wheat germ. Mix with a wooden spoon until well incorporated. Then briefly mix with the electric beater. 
  • Lightly beat the eggs, add to the mixture and mix well with the wooden spoon. 
  • Spoon half the mixture into a slice tin, smoothing the top and pressing into the corners. (Don’t worry if mixture is a little crumbly.) Then scatter the chopped pear on top. 
  • Add enough milk to the remaining mixture and mix until smooth. Then spread over the top of the pears. Sprinkle a little caster sugar and ground cinnamon over the top and cook in the oven for about 30-40 mins until the pears are tender when pierced with a skewer. 
  • Serve hot with a good dollop of yoghurt on the side.

  • 2½ cups wholemeal self-raising flour
  • ½ cup rolled oats
  • ¼ cup wheat germ
  • 2 eggs
  • 3-4 hard pears, peeled, halved, sliced & then chopped
  • ¼ cup milk
  • caster sugar
  • ground cinnamon
  • plain yoghurt
