A better bowl of olives

Method

  • Rinse the olives and drain well. Then put them in a jar. 
  • Add the garlic and rosemary and fill the jar with oil. 
  • Cover and leave for 1-2 weeks before using, turning the olives now and again.

Ingredients

  • 2 cups mixture of olives, pits in
  • 4 whole garlic cloves, smashed
  • a few fresh rosemary sprigs
  • extra virgin olive oil
