Mustard & frankfurts in a blanket


  • Preheat oven to 180°C fan forced (200°C normal). 
  • Either blanch the sausages in boiling water until cooked and drain well or cook on a lightly oiled, preheated ridged grill. Set aside to cool. 
  • Cut the pastry sheets in half crossways and then in half corner to corner to form triangles on a lightly floured workbench. 
  • Mix together the egg and milk. Paint a pastry triangle with egg wash and smear with the mustard. Then place a frankfurt  in the middle and roll up. Neaten the sides, paint the outside with more egg wash and place on a lightly oiled baking tray. Repeat the process. 
  • Cook in the oven for about 10-15 mins until the pastry is golden. 
  • nb.  A good tomato sauce can be used instead of the mustard, if you prefer.

  • 3 puff pastry sheets
  • plain flour
  • 1 egg
  • ¼ cup milk
  • any mustard
  • cooking oil spray
