BBQ cherry tomatoes with smoked trout dip smeared sourdough


  • Place the tomatoes in a foil container, spray with oil and cook in a covered BBQ until they begin to split. Then sprinkle a little balsamic over the top with seasonings. 
  • To serve, toast or grill the bread and spread one side with a generous amount of the dip. Then top with the tomatoes and pour a little of the cooking juices over. Sprinkle with a little oil and garnish with the basil. 
  • nb.  The tomatoes could be cooked in the oven, if you prefer.


  • 2 bunches cherry tomatoes, on the stalks
  • olive oil spray
  • balsamic vinegar
  • sea salt & freshly ground pepper
  • 4 thick slices sourdough bread
  • smoked trout dip
  • extra virgin olive oil
  • fresh basil leaves, torn
