BBQ cherry tomatoes with smoked trout dip smeared sourdough
Method

Place the tomatoes in a foil container, spray with oil and cook in a covered BBQ until they begin to split. Then sprinkle a little balsamic over the top with seasonings.

To serve, toast or grill the bread and spread one side with a generous amount of the dip. Then top with the tomatoes and pour a little of the cooking juices over. Sprinkle with a little oil and garnish with the basil.

nb. The tomatoes could be cooked in the oven, if you prefer.
