Soya pork noodles

Method

  • Soak the shiitakes in boiling water for about 30 mins. Then drain well, discard the stalks and slice. 
  • Heat a little oil in a wok (or large heavy-bottomed pan) and briefly stir fry the garlic, ginger and shiitakes. 
  • Add a little more oil, if needed, add the mince and cook until coloured and sealed, mashing and continually stirring. 
  • Then add the soy, Chinese wine and stock. Stir well and gently cook for about 10 mins until thick and fragrant, continually stirring and mashing as you do so. 
  • When ready, soak the noodles in a large bowl of boiling water until separated. Then immediately drain and add to the wok with the coriander and spring onions. Toss well until combined and briefly cook to reheat.

  • 6-8 dried shiitake mushrooms
  • vegetable oil
  • 2 garlic cloves, crushed
  • 1 tbsp finely sliced or grated fresh ginger
  • 300 gm minced pork
  • 3-4 tbsp soy sauce
  • 1 tbsp Chinese rice wine
  • 100 ml chicken stock
  • 1 tbsp sesame oil
  • 2 packets Singapore noodles
  • 3 tbsp chopped fresh coriander
  • 3-4 spring (green) onions, finely sliced
