Welsh cheese on toast (Rarebit)


  • Preheat overhead grill to highest degree. 
  • Put the grated cheese, beer, Worcestershire and Tabasco in a pot. Very gently cook to melt and thicken a little, continually stirring. 
  • Then remove from the heat, add the egg yolk and stir until well combined. 
  • Toast or grill the bread on both sides and then place on a baking tray. Spread the cheese mixture right to the edges. Then sprinkle the diced capsicum and anchovies on top and grill until golden and bubbling. 
  • Serve with a salad on the side for a light lunch or as is as a snack. 
  • nb.  A double boiler can be used for the initial stage, if you like.

  • 90 ml beer (NOT dark or heavy)
  • 1 tspn Worcestershire sauce
  • a splash of Tabasco
  • 1 egg yolk
  • 4 slices of seeded bread
  • 1 heaped tspn finely diced red capsicum
  • 1 heaped tspn finely diced anchovies (optional)
