Sicilian green beans

Method

  • Heat a little oil in a large heavy-bottomed pot and gently sauté the onion and garlic until tender, regularly stirring.
  • Add the wine, stir and cook for about 5 mins until the liquid has reduced quite heavily.
  • Then add the beans, tomatoes and fresh herbs. Stir well and add ½ cup stock with seasonings. Turn down the heat and gently cook until the beans are tender and the sauce is thick and fragrant, adding more stock if needed.
  • To accompany the beans, cook the chicken on a preheated, lightly oiled ridged grill (or BBQ), skin side down first.

  • 2 garlic cloves, crushed
  • ½ cup dry white wine
  • 750 gm green beans, topped & tailed
  • 1 punnet cherry tomatoes, quartered
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh basil
  • ¼-½ cup vegetable stock
  • sea salt & freshly ground pepper
  • freshly grated parmesan
  • 4 chicken breast fillets, skin on
  • a knob of butter
