Pork Lo Mein

Method

  • Whisk the ginger, garlic and sugar with 1 tbsp soy, the cornflour and a splash of vegie oil in a large bowl.
  • Add the pork mince, mix and mash very well. Then set aside for about 15-20 mins to tenderise.
  • When ready, heat a little oil in a wok (or heavy-bottomed non-stick pan) and brown the pork all over, mashing with a wooden spoon as you do so. Remove.
  • At the same time, soak the noodles in boiling water until they separate. Drain well.
  • Wipe out the wok with kitchen paper towels and heat a little fresh oil. Then briefly stirfry the celery, red capsicum and red onion.
  • Add 1½ cups stock with the oyster sauce, black vinegar and cornflour. Stir and cook until the vegies are crisp-tender, adding more stock if needed.
  • Return the pork, toss well and gently cook for about 5 mins until the mince is very tender and the sauce is slightly thickened, continually mashing with a wooden spoon and adding more stock if needed.
  • Add a good splash of soy, the snowpeas, oyster mushrooms and 4 spring onions cut into lengths. Stir and briefly cook to warm through.
  • Then add the noodles, toss well and serve in individual bowls with shredded spring onions scattered on top.

  • 250 gm minced lean pork
  • 1 large packet hokkien noodles
  • 1 celery stalk, sliced
  • 1 red capsicum, cored, seeded & sliced
  • ½ red onion, cut into wedges
  • 2-3 cups chicken stock
  • 1-2 tbsp oyster sauce
  • a splash of Chinese black vinegar
  • 1 heaped tbsp cornflour
  • 8 snowpeas, topped, tailed & halved
  • 6 oyster mushrooms, halved
  • 6-7 spring (green) onions
