Banana & lime jam with waffles


  • Put the bananas, brown sugar, orange and lime juice, and the maple syrup in a pot. Gently simmer for about 30 mins until a jam-like consistency is formed.
  • To make the waffle mixture, whisk the milk with 2 egg yolks until well combined.
  • Add the flour, baking powder and caster sugar. Whisk well and then add the melted butter. Vigorously whisk until well combined.
  • In another bowl, beat the egg whites until light and fluffy. Then add to the flour mixture and gently fold in.
  • Cook the waffles individually in an iron for about 3-3½ mins, being careful not to use too much dough.
  • Serve the waffles with a sprinkling of icing sugar and a dollop of the jam on top.
  • nb. A dollop of cream or ice cream can also be served, if you like.


  • 6 not overly ripe bananas (but not green), peeled & roughly chopped

  • 2 tbsp maple syrup (or honey)
  • 350 ml milk
  • 2 large eggs, separated
  • 325 gm plain flour, sifted
  • 1 tbsp baking powder
  • 2+ tspn caster sugar
  • 75 gm unsalted butter, melted
  • a pinch of salt icing sugar (optional)
