Steamed fish with anchovy butter


  • Place the fish, in one layer, on 1-2 plates that can fit into a large steamer basket. Then sprinkle with seasonings, a little thyme and a squeeze of fresh lemon juice.
  • Place a small knob of butter on each piece of fish, cover and cook until just ready. 
  • While the fish is cooking, gently melt a dollop of butter with the juice of ½ lemon, anchovies and a little ground pepper in a pan. 
  • Put the fish on individual plates, sprinkle the butter over the top and serve with a simple vegie dish and/or green salad on the side.
  •  nb. If you're not an anchovy fan, just make a plain lemon butter.

  • sea salt & freshly ground pepper
  • leaves of a few fresh thyme sprigs

  • butter
  • 6-8 anchovies
  • 2 tbsp chopped fresh parsley
