Sweet couscous with fruit & yoghurt


  • Gently bring the honey and water to the boil in a heavy-bottomed pot and pour over the top of the couscous and sultanas in a bowl. Stir and set aside for about 5 mins until the liquid is absorbed.
  • Then fluff up the couscous with a fork and set aside to cool a bit. 
  • When ready, layer individual glasses (or bowls) with the couscous, fruit salad and yoghurt. Then top with some more couscous and a good dollop of yoghurt.


  • 115 gm honey
  • 375 ml water
  • 1 cup couscous
  • 50 gm sultanas
  • selection of fresh fruit, prepared & cut into bite-sized pieces
  • plain or flavoured yoghurt
