Passionfruit friands


  • Preheat oven to 180°C fan forced (200°C normal). 
  • Whisk the egg whites to form semi-soft peaks in a large bowl. 
  • Then sieve the ground almonds, icing sugar and self-raising flour into the bowl.
  • Pour 80 gm melted butter around the edge of the bowl and very gently fold the dough together with a spatula.
  • Brush the insides of friand (or muffin) tins and fill them two-thirds full with the dough. Cook in the oven for about 15 mins until golden and risen. 
  • When the friands are cooked, whisk the passionfruit pulp and caster sugar with a fork. Then spoon the mixture over the friands and set aside to cool for about 15 mins, before removing and cooling on a rack.
  • Serve with your favourite hot beverage.

  • 2 tbsp caster sugar
