Bill's onions


  • Preheat oven to 160°C fan forced (180°C normal). 
  • Peel, top and tail the red onions, cutting a little extra off the bottom. Then make 2 deep cuts in the shape of a cross on the top of each one - not quite all the way through. 
  • Cut the pastry sheets into 4 large squares for the onions to sit on.
  • Then combine the egg and milk. 
  • Sit each onion on a pastry square and paint the edges with the egg wash. Then push the butter into the cavity and sprinkle with a little sugar and a generous amount of seasonings. 
  • Put the pastry with onions into a large, lightly oiled oven tray. Then cut the remaining pastry into larger squares and place each one individually over the onions. Press down and crimp the edges with a fork. 
  • Generously paint the pastry with egg wash and cook in the oven for about 40 mins until golden brown and the onions are tender when pierced with a small sharp knife. 
  • Serve with a simple meat dish.
