Bacon, crouton & lettuce salad


  • Preheat oven to 200°C fan forced (220°C normal). 
  • Dice the bread and bacon, toss in a little oil and cook in the oven until crisp-golden all over, tossing now and again. Drain on kitchen paper towels.
  • Then gently toss the croutons, bacon, watercress, rocket, cos, avocado and chives with red wine vinegar, oil and seasonings to taste.


  • 3 slices white toast bread, crusts removed
  • 4 rindless bacon rashers
  • olive oil
  • a handful of watercress
  • a handful of baby rocket leaves
  • inner leaves of 1 cos lettuce
  • ½ avocado, diced
  • 1 heaped tbsp snipped chives
  • red wine vinegar
  • sea salt & freshly ground pepper
