  • Preheat oven to 180°C fan forced (200°C normal). 
  • To make savoury palmiers, combine the egg and milk in a small bowl. 
  • Place the pastry sheets on a lightly floured workbench and paint the edges with egg wash. Scatter tasty cheese over the top, leaving a thin edge. 
  • Fold the pastry sides into the centre, overlapping a little, and fold in half again. Then cut into even-sized slices and carefully flatten out a bit with a rolling pin. Place on a lightly oiled, large baking tray. 
  • To make sweet palmiers, repeat the process, but sprinkle with caster sugar this time. Also place these on the baking tray (or another, if needed) and paint the tops with egg wash. Cook in the oven until golden all over.
  • nb.  Anchovies can be added to the savoury ones and sultanas to the sweet ones, if you like.
