Coca Cola pork belly


  • Preheat oven to 210°-220°C fan forced (230°-240°C normal). 
  • Whisk the Coca Cola, sweet chilli sauce, tomato ketchup, worcestershire and red wine vinegar with the garlic and chilli paste until well combined. 
  • Then place the ribs in a large oven tray, in one layer, and pour the sauce over the top. Cook in the oven for about 20 mins, turning a couple of times. 
  • At the same time, place the potatoes on individual pieces of kitchen foil. Sprinkle with a little oil and a generous amount of salt, wrap up and cook in the bottom of the oven.
  • When ready, cut a cross in the potatoes and spoon a dollop of sour cream on top. 
  • Serve the ribs with a potato on the side with a mound of good American coleslaw, if you like.

  • 1 cup tomato ketchup
  • 2 tbsp worcestershire sauce
  • 2 tbsp red wine vinegar
  • 2 garlic cloves, crushed

  • 2 kg pork belly, cut into thick strips
  • vegetable oil
  • 4 medium-large potatoes, in their jackets
  • sea salt
  • sour cream
