Cape Malay pork & apricot skewers


  • To make the marinade, heat a little oil in a heavy-bottomed pan and gently sauté the onion, 2 crushed garlic cloves and ginger until softish, regularly stirring. 
  • Add the turmeric, ground cumin and coriander, garam masala and curry powder. Stir well and briefly cook to toast the spices, adding a little more oil if needed. 
  • Then add the tamarind paste and apricot jam with ½ cup stock and a pinch of salt. Mix until well combined, turn down the heat and simmer for a few minutes. Set aside to cool a little. 
  • Pour the marinade over the pork, toss well, set aside to cool and then refrigerate for about 2 hours. 
  • At the same time, soak the raisins in the sherry and marinate for 1-2 hours. 
  • When ready, put the raisins with any liquid in a rice cooker (or large heavy-bottomed pot) with the rice, 1¼ cups stock, 1 whole garlic clove in the centre and a good pinch of salt. Cover and cook. 
  • Alternately thread the marinated pork and apricots on skewers and cook on a lightly oiled, preheated ridged grill (or BBQ), brushing generously with the marinade as you do so - stopping about 5 mins before the meat is ready. 
  • When the rice is ready, remove the garlic clove and add the lemon zest, butter and parsley. Combine and fluff up a bit with a spoon. Cover and keep warm. 
  • To serve, mound the rice on individual plates and top with the skewers.

  • a good dollop of butter (optional)
  • 2 tspn chopped fresh parsley
