Satay chicken salad, the cheat's version


  • Heat the satay sauce in a pot with a little water to thin it out. 
  • Then gently toss the tomatoes, cucumber, red onion, bean shoots and snowpea shoots with the coriander, a little oil, the lime juice and seasonings. 
  • To serve, mound the salad in individual bowls and top with the shredded chicken, a good sprinkling of satay sauce and a garnish of chillies and spring onion.


  • 1 cup good quality bought (or homemade) satay sauce
  • ½ punnet cherry tomatoes, halved
  • ½ continental (telegraph) cucumber, sliced & halved
  • ½ red onion, finely sliced
  • a good handful of bean shoots
  • a good handful of snowpea shoots
  • a good handful of fresh coriander leaves
  • vegetable oil
  • juice of  ½-1 lime
  • sea salt & freshly ground pepper
  • ½ bought BBQ chicken, skin removed & meat shredded
  • 2 long red chillies, finely sliced
  • 3 spring (green) onions, shredded
