Speedy lemon pudding


  • Combine the flour, butter, sugar, vanilla, lemon zest and eggs until creamy using an electric mixer. 
  • Then transfer the mixture to a decent sized microwave-proof bowl. Smooth out the top and cook in the microwave on high for about 3 mins until risen. Remove and set aside for 1 min. 
  • Heat the lemon curd in the microwave on high for 1 min. Then stir until smooth and spoon it over the pudding. Set aside to set and cool a little.
  • Serve with a good dollop of cream on top.


  • 100 gm self-raising flour
  • 100 gm unsalted butter, softened
  • 100 gm caster sugar
  • 1 tspn vanilla extract
  • grated rind of 1 lemon
  • 2 large eggs
  • 4-5 tbsp lemon curd
  • thickened cream
