Orange & apricot rice pud


  • Put the rice, milk and nutmeg in a bowl. Stir well, cover with plastic wrap, pierce 3 times with a sharp knife and cook on high for 5 mins in the microwave. 
  • Remove the bowl, stir and set aside for 1 min.
  • Then cover again and cook in the microwave on high for about another 6-7 mins, until the rice is cooked and the milk is absorbed. Remove and set aside for 2 mins. 
  • Put the dried apricots with 1 tbsp honey and the orange juice in another bowl. Stir and cook in the microwave on high for 1 min, until the apricots have plumped up. 
  • Then add the orange zest, fromage frais and the apricot mixture to the rice. Stir well until the fromage frais has melted. Taste for sweetening. 
  • Serve in individual bowls with a little honey drizzled over the top.


  • 200 gm short grain (pudding) rice
  • 600 ml milk
  • a good pinch of ground nutmeg
  • 140 gm dried apricots, roughly chopped
  • honey
  • grated rind & juice of 1 orange
  • 4 tbsp fromage frais (or thickened cream)
