Pineapple Surprise


  • To make the sugar syrup, put the lime juice, sugar, ginger and vanilla seeds in a pot and gently cook until a light caramel is formed. DON'T MIX, just swirl.
  • Then add the orange juice, swirl and reduce a little.
  • Coat the pineapple well with the sugar syrup and then with the coconut.
  • To serve, place a pineapple ring in individual bowls and top with a good dollop of cream or ice cream and a sprinkling of 100's & 1000's.
  • nb. For the grownups, dark rum can be added to the sugar syrup in place of the orange juice.

  • seeds from 2 vanilla pods
  • 4 tbsp fresh orange juice
  • 1 ripe pineapple, peeled & cut into rings
  • desiccated coconut
  • thickened cream or ice cream
  • 100's & 1000's
