Bacon & egg burger with balsamic tomatoes
Method
- Heat a little oil in a heavy-bottomed pot and gently sauté the red onion and garlic until tender, regularly stirring.
- Then add the tomatoes, stock, seasonings and balsamic. Stir well and gently cook for about 10 mins until thick and fragrant.
- When ready, stir through the basil and taste for seasoning.
- Cook the bacon on a lightly oiled, preheated ridged grill or in a pan and panfry the eggs.
- To serve, layer the lettuce, tomato sauce, bacon and an egg in each bun.
- nb. The sauce can be pre-made and served cold.

- olive oil
- 1 small red onion, chopped
- 2 garlic cloves, crushed
- 2 cans diced tomatoes
- ½ cup chicken stock
- sea salt & freshly ground pepper
- 2-3 tbsp balsamic vinegar
- 2 tbsp torn fresh basil leaves
- olive oil spray
- 4-8 rindless bacon rashers
- 4 large eggs
- a few cos or iceberg lettuce leaves
- 4 burger buns, warmed
