Bacon & egg burger with balsamic tomatoes


  • Heat a little oil in a heavy-bottomed pot and gently sauté the red onion and garlic until tender, regularly stirring.
  • Then add the tomatoes, stock, seasonings and balsamic. Stir well and gently cook for about 10 mins until thick and fragrant.
  • When ready, stir through the basil and taste for seasoning.
  • Cook the bacon on a lightly oiled, preheated ridged grill or in a pan and panfry the eggs.
  • To serve, layer the lettuce, tomato sauce, bacon and an egg in each bun.
  • nb. The sauce can be pre-made and served cold.

  • 2-3 tbsp balsamic vinegar
  • 2 tbsp torn fresh basil leaves

  • 4-8 rindless bacon rashers
  • 4 large eggs
  • a few cos or iceberg lettuce leaves
  • 4 burger buns, warmed
