Leeky salmon in a parcel


  • Cut two large squares of baking paper and place them on a workbench. Then top each one with a piece of salmon, seasonings, sliced leek, peas and crème fraiche. Wrap up, place both parcels on a large plate and cook in the microwave on high for 5 mins.
  • Unwrap the fish, place on individual plates and serve with buttered, cooked chats or a simple green salad on the side.

  • 2 x 140 gm salmon fillets, bones & skin removed

  • 1 medium leek, very finely sliced
  • 50 gm frozen peas, thawed (or fresh peas)
  • 4 tbsp crème fraiche (or sour cream)
