Carlo's cheese & egg sandwiches
Method
- Spread a little butter on one side of each slice of bread and make sandwiches with the cheese slices.
- Melt a little butter with the oil in a heavy-bottomed pan and fry the sandwiches until golden brown on both sides. Then remove and cut out a large round in each sandwich using a pastry cutter.
- Return the rounds and outside crusts to the pan. Break an egg into the centre of each cavity, cover the pan with a lid and gently cook to the desired degree.
- Decorate a face on each round with tomato sauce and place on top of each cooked egg.
- Serve with the tomato sauce bottle on the side.

- 4 slices white toast bread
- butter
- 2-4 cheese slices, good quality
- olive oil
- 2 eggs
- tomato sauce
