Tarte Tatin


  • Preheat oven to 170°C fan forced (190°C normal).
  • Gently melt the butter in a tarte tatin dish (or any heavy-bottomed round oven dish). Then add the caster sugar and gently cook for about 5 mins until golden brown.
  • Neatly arrange the apple slices on the caramel and press down.
  • Cut the pastry into the shape of the dish and place on top of the apples. Tuck in the edges, prick with a fork in a few places and cook in the oven for about 30-40 mins until golden brown. Remove the dish from the oven and set aside for 10-15 mins, before turning out onto a plate.
  • Slice and serve with a good dollop of cream on the side.

  • 1¼ kg Granny Smith apples, peeled, cored & finely sliced in rounds
