Tangy grilled chicken breasts with cheese, bacon & pineapple


  • Preheat the overhead grill to highest degree.
  • Line a baking tray with kitchen foil. Lay the chicken on top, generously brush the tops with BBQ sauce and grill for about 10 mins, being careful not to caramelise too much.
  • Then turn the chicken over, brush with more sauce and add the pineapple and bacon to the tray.
  • When the chicken is cooked, top each piece with bacon, pineapple and a good mound of grated cheese.
  • Cook the chicken under the grill again until the cheese has melted and is golden.
  • Serve with a simple salad on the side.
