Barbecued Focaccia with smoked salmon, balsamic onions & horseradish sour cream
Method
- Heat a little oil in a non-stick pan and gently sauté the onions, with a generous splash of balsamic and seasonings until caramelised, stirring now and again. Set aside in a warm place.
- Combine the sour cream and creamed horseradish in a small bowl. Taste for seasoning.
- Then spray both sides of the bread with oil and cook on a preheated ridged grill or BBQ.
- Layer the focaccia bases with the caramelised onion, smoked salmon and a decent amount of horseradish sour cream. Press down the tops, cut in half and serve as is.

- olive oil
- 2 onions, finely sliced
- balsamic vinegar
- sea salt & freshly ground pepper
- 2 heaped tbsp sour cream
- 2 heaped tspn creamed horseradish
- olive oil spray
- 4 small focaccias, halved
- slices of smoked salmon
