Barbecued Focaccia with smoked salmon, balsamic onions & horseradish sour cream


  • Heat a little oil in a non-stick pan and gently sauté the onions, with a generous splash of balsamic and seasonings until caramelised, stirring now and again. Set aside in a warm place.
  • Combine the sour cream and creamed horseradish in a small bowl. Taste for seasoning.
  • Then spray both sides of the bread with oil and cook on a preheated ridged grill or BBQ.
  • Layer the focaccia bases with the caramelised onion, smoked salmon and a decent amount of horseradish sour cream. Press down the tops, cut in half and serve as is.

  • 2 heaped tspn creamed horseradish
  • olive oil spray
  • 4 small focaccias, halved
  • slices of smoked salmon
