Tuna & lemon Spiedini


  • To make the dressing, whisk the garlic with the olive oil, juice of 1 lemon and a decent amount of seasonings.
  • Cut the remaining lemons into small wedges.
  • Then thread the lemon wedges, tuna and bay leaves onto 4 skewers.
  • Cook the skewers on a lightly oiled, preheated ridged grill (or BBQ) until the fish is medium-rare and the lemons are lightly caramelised, brushing with the marinade as you do so.
  • Serve with a simple salad on the side.

  • 8 fresh bay leaves
